What is faux seared skin tuna? A tuna painted with a sauce to look like it's been seared. OR do they mean faux tuna itself. Like you can get faux crab meat. Sorry I'm so uncultured :(

Your not at all uncultured! The menu was sent in Spanish...with all the ingredients in grams, etc. We had to translate and the literal translation was fake skin tuna...which I thought sounded too Hannibal Lectorish. It's real tuna wrapped in rice paper which has been dyed with squid ink! We went back and forth on what to call it...I'm not sure what we decided is the best, but I just couldn't come up with anything else.

I saw a picture of it...it looks just like the tuna chunks have been seared.

ah...Sher asked exactly what I was going to ask. Now I know!
I'd never heard of the slow food movement until a show on NPR, the Splendid Table, I think it's called.
Interesting!

I've found that a lot of people haven't heard of it. It's becoming an International force. Have you seen the movie Food, Inc.? Very enlightening!
